VEGETABLE BEEF SOUP

Ingredients
  • one C. (fifteen ml) vegetable oil
  • one cup (two hundred fifty mL) diced stewing beef
  • half cup (one hundred twenty five  mL) diced onion
  • half cup (one hundred twenty five  mL) diced carrots
  • half c  celery, diced
  • a quarter c  quinoa
  • four c beef broth
  • one sprig rosemary
  • one sprig thyme
  • one bay leaf
  • three sprig parsley
  • half cup (one hundred twenty five  mL) diced red bell pepper
  • a quarter cup (sixty mL) fresh or frozen peas
  • °Salt also black pepper
Methods 
In  saucepan, heat oil on medium-high heat. add the diced beef and brown them for about five minutes. add onion, carrots and celery and cook for ten minutes or until onion is tender. add quinoa and broth.
Make a bouquet garni: place the rosemary, thyme, bay leaf and parsley on a four-inch (ten cm) square of cheesecloth (cheesecloth) and tie with kitchen twine. to form a pouch (or simply tie the herbs together with kitchen twine). Put the bouquet garni in the saucepan.
Simmer soup for seventen minutes or until quinoa is tender. add the bell pepper and peas in the last eight minutes of cooking. remove the bouquet garni. Salt and pepper.
